Vinification and aging

Winemaking at Château de Fargues is committed to an environmentally conscious tradition. The grapes, harvested by hand, are carefully selected and destemmed before being pressed. The must is then fermented in oak barrels, where it acquires complexity and richness. Aging, of varying duration, allows the wine to refine and integrates the oak aromas with the fruity notes. This meticulous process, combined with rigorous temperature control, guarantees a perfect balance between sweetness and freshness, thus creating a Sauternes of great finesse.
