    Vinification and aging

    Winemaking at Château Filhot is a meticulous process that begins with the hand-harvesting of carefully selected grapes, chosen for their perfect ripeness. After gentle pressing, the juice is fermented in stainless steel tanks, preserving the freshness of the aromas. Aging takes place in oak barrels, some of which are new, adding a touch of complexity and roundness to the wine. The time spent in the barrel also refines the texture and enriches the aromatic bouquet, resulting in an elegant and refined Sauternes.
