Vinification and aging

Winemaking at Château Le Gay is a meticulous process that begins with the hand-harvesting of the grapes, followed by rigorous sorting. After delicate destemming, the berries are placed in vats for temperature-controlled fermentation. This wine benefits from aging in barrels, some of which are new, adding further complexity without masking the fruit. Aging lasts approximately 12 months on fine lees, thus promoting the expression of aromas and a rounded mouthfeel.
