Maury is an appellation of Languedoc-Roussillon. Sweet Maury is a regional specialty: fermentation is intentionally stopped by the addition of grape alcohol. This process preserves the natural sugars from the grapes in the final wine, resulting in naturally sweet wines. Aged in oak barrels, these wines are rich and silky, evoking notes of roasting and candied fruit, and offering incredible richness. Since 2011, there has also been a dry Maury AOC; these wines are powerful, elegant, and bursting with black fruit and garrigue aromas.

The Maury PDO
Maury is a protected designation of origin (AOC) located northwest of Perpignan in the Pyrénées-Orientales department . Primarily known as a naturally sweet wine, there is also a still dry red Maury. Since 2011, the Maury AOC has recognized two types of wine: sweet Maury and dry Maury .

The naturally sweet wine of Maury and its winemaking
Maury Doux refers to naturally sweet wines with a higher residual sugar content than other wines. These wines are made from its preferred grape variety, Grenache Noir . They are also called "fortified wines." Fortification occurs during the winemaking process and consists of interrupting fermentation to add distilled alcohol.
Maury Vin Doux Naturel is produced by fortification during fermentation. The musts must contain a minimum of 252 grams of sugar per liter. Fortification is carried out using a minimum of 96% ABV grape spirit. Between 5 and 10% of this spirit is added to the must before December 31st of the harvest year. This fortification process allows the wines to retain natural sugars after fermentation. The alcohol content is between 15 and 18%.

Maury Doux wines are often enjoyed as dessert wines, perfectly complementing chocolate desserts, fruit tarts, and blue cheeses. At Cavissima.com , we offer a selection of Maury Doux wines from the region's finest producers, guaranteeing you a unique and unforgettable tasting experience.

The dry Maury
The dry Maury obtained its AOC in 2011. These are powerful wines , with notes of black fruit and garrigue.

Whether sweet or dry, Maury wines offer exceptional aging potential . The balance between fruit, power, and freshness gives the appellation's wines remarkable complexity.
