Vinification and aging

The winemaking of the 2020 Aloxe-Corton Jules follows Burgundian tradition. The grapes, carefully hand-harvested, are destemmed before being fermented in temperature-controlled tanks. This method preserves the aromas and ensures a gentle extraction of tannins. After fermentation, the wine is aged in oak barrels, some of which are new, for 12 to 15 months.
