Producer

The vineyard of Domaine Dujardin is situated on clay-limestone soils typical of Burgundy, which promote excellent drainage while preserving the moisture necessary for the vines. The carefully tended vines benefit from optimal sun exposure, allowing the grapes to ripen slowly and express the full aromatic richness of the terroir. climat The region's continental climate, with its hot summers and cold winters, contributes to the complexity and typicity of the wines produced. Each plot is cultivated with care, respecting natural cycles, to guarantee the best expression of each vintage.

Owner and history

THE Domaine Dujardin is a family story shared across different generations. Located in the heart of the Côte de Beaune, in Monthelie (21 Côte d'Or, Burgundy). THE domaine owns an area of 8 hectares of vines mainly in the Monthelie, Meursault and appellations Auxey-Duresses. Catherine and Ulrich are now joined by their children Margaux and Paul. The complementarity between generations allows for the evolution of the Domaine on a new style of wine.

Vinification and aging

Winemaking at Domaine Dujardin is made according to Burgundian traditions. After a manual harvest, the grapes are destemmed and gently pressed. Fermentation takes place in stainless steel tanks, preserving the freshness and aromas of the fruit. The wines are then aged in oak barrels, some of which are renewed each year to impart a subtle touch of wood without masking the wine's typicity. Aging lasts approximately 12 months, during which the wines are regularly racked to aerate the product and encourage the integration of aromas. This meticulous process results in harmonious and balanced wines, true to the identity of the terroir.
