    Vinification and aging

    Winemaking at Domaine Faiveley is carried out in accordance with Burgundian traditions. The grapes are harvested by hand and meticulously sorted. Fermentation takes place in temperature-controlled tanks to preserve the purity of the aromas. Aging occurs in oak barrels, some of which are new, allowing the wood to subtly integrate into the wine while respecting its character. This delicate process reveals the complexity and depth of the aromas, while ensuring a beautiful length on the palate.
