    Vinification and aging

    Hand-harvested, with the grapes sorted upon arrival at the winery. Vinification takes place in truncated conical wooden vats for Syrah and Mourvèdre, and in traditional concrete and stoneware vats for the other grape varieties. The different grape varieties are blended after malolactic fermentation. The wine is aged in oak casks for one year before bottling.
