Vinification and aging

The vinification of Prunotto's 2020 Barbaresco is carried out with the utmost care, respecting tradition. The grapes are harvested by hand, then sorted and destemmed. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks for two to three weeks. Maceration is then extended to extract tannins and aromas from the grapes. Aging occurs in oak barrels for a variable period to refine the wine and add further complexity.
