    Vinification and aging

    Winemaking at Château Canon It is a meticulous and thoughtful process. The grapes, harvested by hand, are carefully sorted before being destemmed and crushed. Fermentation takes place in temperature-controlled vats, allowing for precise temperature control. Aging occurs in oak barrels, some of which are renewed annually, for a period of 12 to 16 months. This traditional method allows the aromas to develop while preserving the integrity of the fruit. The wine is then bottled unfiltered to retain all its richness.
