Vinification and aging

Winemaking at Château Canon The wine is made with meticulous care. The grapes, harvested by hand, are hand-sorted to retain only the very best. Fermentation takes place in temperature-controlled vats, allowing for precise temperature control to extract the finest aromas. Aging occurs in oak barrels, some of which are renewed each year to preserve the purity of the fruit while adding a touch of elegance.
