    Vinification and aging

    Winemaking at Domaine Faiveley is a meticulous process, blending tradition and innovation. The hand-harvested grapes are carefully sorted before being destemmed. Fermentation takes place in temperature-controlled tanks, allowing for precise temperature management. Aging then occurs in oak barrels, some of which are new, for 12 to 18 months. This aging period allows the tannins to soften and the oak aromas to integrate, while preserving the purity of the fruit. Each step is carefully considered to reveal the very best of this exceptional terroir.
