    Owner and history

    The Volnay vineyards, located between Pommard and Meursault, are renowned for producing some of Burgundy's most refined Pinot Noirs. The temperate climate, combined with poor, well-drained clay-limestone soil, promotes slow and even ripening of the grapes, guaranteeing a pure and elegant expression of the terroir. The plots cultivated by Joseph Drouhin benefit from an ideal exposure, between 220 and 300 meters in altitude, on gentle slopes where the vines draw their nutrients from deep within a subsoil composed of limestone and marl.

    Vinification and aging

    At Joseph Drouhin, winemaking follows a traditional and meticulous approach, faithful to biodynamic principles. After hand-harvesting in small crates to preserve the integrity of the grapes, fermentation takes place in open vats, with a gentle three-week maceration, promoting a delicate extraction of tannins and aromas. Aging occurs in French oak barrels (20% new oak) for 14 to 18 months, allowing the wine to gain complexity while retaining its natural freshness. This careful winemaking results in a wine with a velvety texture and pure aromatic expression, where elegance takes precedence over power.
