    Vinification and aging

    Winemaking at Domaine Faiveley is a meticulous process, respecting Burgundian traditions. The grapes are harvested by hand and then carefully sorted. Fermentation takes place in wooden vats, encouraging the expression of aromas. Aging in oak barrels, some of which are new, lasts approximately 12 to 15 months. This aging period allows the wine to develop its complexity while subtly integrating the oak notes.
