    Vinification and aging

    Winemaking at Domaine Faiveley is carried out with absolute respect for tradition. After a manual harvest, the grapes are destemmed and gently crushed. Fermentation takes place in stainless steel tanks, preserving the freshness and purity of the aromas. Aging in oak barrels, some of which are new, gives the wine complexity and depth, while respecting the identity of the terroir. Aging lasts several months, with regular racking to refine the wine before bottling. Each step is meticulously orchestrated to guarantee the truest expression of Mercurey.
