    Domaine Philippe Gilbert , a committed player in Menetou-Salon, has been cultivating its vineyard biodynamically for many years. The natural approach and meticulous work in the cellar result in honest, straightforward wines that perfectly express the clay-limestone terroir of Parassy.

    Jadis 2020 reveals a deep nose of flint, ripe lemon, and white flowers. The palate, ample and taut, blends richness and precision, supported by a remarkable saline mineral structure.

    Les Chandelières 2018 offers a delicate bouquet of citrus, linden blossom, and pear, enhanced by a subtle smoky note. The palate is captivating with its elegance, silky texture, and taut, lingering finish.

    Cloudy Bay Sauvignon Blanc 2024 expresses itself brilliantly: notes of passion fruit, lime zest, fresh grass, and blackcurrant bud. The palate, lively and aromatic, surprises with its intensity and precision, a signature of the estate.

    Jadis originates from the steep slopes of Chavignol, where flint soils and Kimmeridgian limestone sculpt deep and straightforward wines.

    Les Chandelières are rooted in the clay-limestone soils of Menetou-Salon, a terroir renowned for producing Sauvignons that are elegant, precise and subtly smoky.

    Cloudy Bay, finally, exploits the alluvial soils and gravelly terraces of Marlborough, whose generous sunshine and cool nights reveal a vibrant Sauvignon Blanc, intensely aromatic and perfectly ripe.

    Domaine Henri Bourgeois remains an emblematic family business in the Sancerre region, now run by the 10th generation, guardians of a tradition of precision and high standards.

    Domaine Philippe Gilbert, which has been in the hands of the family since the 18th century, has established itself as a pioneer of biodynamic farming in the region, conducted with conviction and modernity.

    Cloudy Bay, founded in 1985 by David Hohnen, now belongs to the LVMH group and remains a global reference for Sauvignon Blanc, a symbol of the revival of New World wines.

    Vinification and aging

    Henri Bourgeois signs Jadis thanks to a precise plot-by-plot vinification, with slow fermentation in large oak casks and aging on fine lees which brings volume and length.


    At Philippe Gilbert's, winemaking follows the principles of biodynamics, with natural fermentations and aging in vats and demi-muids that respects the identity of the terroir.


    Cloudy Bay produces its Sauvignon using gentle pressing, with fermentations partly in tanks and partly in old barrels, in order to preserve the energy of the fruit while adding complexity.
