Although initially unwilling to become a winemaker, Yves had always been passionate about gastronomy and wine tasting. He completed his military service in Alsace and had the opportunity to discover many local specialties. It was then that he had his epiphany about wine. His two passions ultimately led him back to his roots and the family vineyard. When his uncle retired and his parents looked for a successor, he didn't hesitate for a second. A rapidly expanding field
Significant transformations
As early as 1992, Yves established a new winery in Verlieu, subsequently implementing a vast expansion and construction program. Everything was redesigned: the winemaking, aging, and storage buildings, as well as those for welcoming visitors. At the same time, he installed a new vat room and modified the wine ranges to include single-vineyard wines. All these improvements ensured the proper application ofthe Cuilleron methodTo perfect this, the estate pays particular attention to soil balance. Harvesting is done by hand, with minimal intervention and no insecticides used. Fermentation occurs using natural yeasts, and aging takes place in oak barrels. Many projects are still in the pipeline for the estate, such as replanting old grape varieties to create new, unique cuvées. The business is growing rapidly but remains committed to traditional principles. Cave Cuilleron has a bright future ahead.
